EXTRA VIRGIN OLIVE OIL

img1Extra virgin olive oil of high quality we get exclusively from healthy and optimally mature fruit of the olive for processing into oil. Olives are hand-picked from the trees of 5 different varieties of which are dominated by indigenous Croatian variety of Oblica and Drobnica with its share of 75%. So healthy fruits are processed immediately after harvest - by cold pressing at a temperature of not more than 27⁰C. The oil obtained after processing is stored in stainless steel containers protected from oxidation by an nutrition inert gas nitrogen. This oil is appreciated for its fine, well-balanced and unique aroma, taste and for its long storage time.

An excellent choice for the preparation of each dish.




OLIVE LEAF TEA

img1Olive leaf has recently become a focus of interest for the scientific community and the industry worldwide, which is evident by the large number of scientific papers presenting data on the therapeutic qualities of the olive leaf. Research on the olive leaf has revealed that these therapeutic qualities are due to the phenol compounds, i.e.: rutin, catechin, oleuropein, and others. Among the bioactive compounds of olive leaf, oleuropein has a very significant pharmacological activity. Surveys have shown that oleuropein contains antioxidant, antiviral, antimicrobial and anti-inflammatory properties.




SAGE LEAF TEA

img1Common sage (Salvia officinalis) is a wild plant growing in coastal areas of Mediterranean countries as a perennial subshrub. Because of its wide use, it has been cultivated and can grow in many places throughout the world; however, the well-known Dalmatian sage has the highest reputation worldwide due to its specific essential oil content, which has a characteristic flavor. It grows wild on the Dalmatian coast precisely due to the Dalmatian karst, the specific soil and Mediterranean climate, which provide a perfect combination of everything needed to grow naturally. This is the reason why common sage is considered to be native to Dalmatia.




GREEN AND BLACK TABLE OLIVES

img1img1Green olives with a firm texture, rich flavor and preserved in salt solution. Olives are picked before they are ripe to end. Use in salads, appetizers, sauces, with pizza or as a standalone healthy snack.

Did you know that the black olives are acctually mature green olives? They are harvested in November and December, in contrast to the green, which are harvested a month or two earlier.




MARINATED DALMATIAN SHALLOT

img1Not so long ago, almost every rural household in Zagora and on the islands used to cultivate the Dalmatian shallot in exceptionally higher quantities than today. It has a special look, aroma and taste, and it also counts among the traditional delicacies of the region. The product is a delicious character, intended for the general population of people (from infants to the elderly), in addition to various foods (eg, ham, cheese, various boiled or roasted meat), as a replacement for a salad and as a basis for making sauces.
